    In the early 1960s, it was reported that zinc deficiency was the cause of retarded growth and delayed puberty among some 18 to 19-year-old boys in Egypt and Iran. These were the first documented cases of zinc deficiency among humans, establishing zinc as an essential nutrient.4

    The diets of the zinc-deficient boys consisted mainly of unleavened whole grain bread, which is particularly rich in phytic acid. As we saw earlier for other minerals (e.g., iron and calcium), phytic acid can bind zinc and prevent its absorption. So what little zinc there was in their diet was made less available by the high amounts of phytic acid. Also, other conditions (e.g., parasitic infections) contributed to the deficiency.

    Zinc is closely linked to animal protein, and the deficient boys had very little of these “foods of the rich.” Rich sources of zinc include shellfish (especially oysters), red meats, and liver. Milk and eggs also provide zinc, but in lesser amounts. For vegans, some fairly rich plant sources of zinc include wheat germ, black-eyed peas, and fermented soybean paste (miso).

    Zinc is found throughout our bodies—in virtually every cell—and is particularly noted for its role in assisting the activity of numerous proteins, including many enzymes. Zinc plays a diverse role in a multitude of important bodily functions (e.g., protein synthesis, immune defense), and is needed for the health of all tissues (see Fig. 17-4).

    Zinc Deficiency

    Since zinc is involved in so many body processes, the list of deficiency symptoms is long. They include impairments of growth, wound healing, immune function, and taste perception. A severe deficiency can also cause acne. But most cases of acne aren’t from a zinc deficiency. For acne and other symptoms of zinc deficiency, once again we should remember that if the condition isn’t caused by a zinc deficiency, zinc won’t help cure it.

    Severe zinc deficiency is unusual in this country. But marginal intake may be common among certain segments of the population, particularly people who don’t eat much animal protein or whole grains. Unlike iron, zinc is not commonly added to fortified foods such as breakfast cereals, and is not a standard component of the enriched flour used to make white bread and other baked goods.

    Zinc Toxicity

    Excess zinc—typically from zinc supplements—can cause nausea, bloating, cramps, diarrhea, and fever. Zinc taken in amounts not much higher than the recommended amount can cause a copper deficiency by interfering with the absorption and use of that required trace mineral.
