The digestive system is the gateway through which our bodies receive the nutrients needed for energy, growth, and overall health. In the study of nutrition, understanding how the body breaks down food into usable components is essential. The digestive system is a complex network of organs and processes that work together to mechanically and chemically digest food, absorb nutrients, and eliminate waste. Digestion of even one apple (Figure 3.1) requires the full coordination of all parts of the digestive system. From the moment food enters the mouth to its final exit from the body, each step plays a vital role in making nutrients available for use.

This chapter explores the structure and function of the digestive system, the journey of food through the gastrointestinal tract, and how nutrients are absorbed and transported to where they are needed most. By understanding digestion, we can better appreciate the connection between what we eat and how our bodies function.

    • 3.1: Overview of the Digestive System
This page explains the digestive system's structure and function, highlighting the GI tract's layers and key processes like peristalsis that aid in digestion and nutrient absorption. It also discusses strategies to enhance nutrient absorption, emphasizing the importance of gut health, specific nutrients, and dietary practices while addressing factors that may impede nutrient uptake.
    • 3.2: Functions of the Digestive Organs
This page details the roles of various gastrointestinal sphincters, including their regulation of food flow and prevention of reflux, with a focus on the gastroesophageal and pyloric sphincters. It discusses the consequences of weakened sphincters, particularly in conditions like GERD, and outlines the three phases of digestion—cephalic, gastric, and intestinal—emphasizing their physiological processes and the coordinated actions necessary for digestion and nutrient absorption.
    • 3.3: Chapter 3 References
This page discusses key textbooks and research articles centered on anatomy, physiology, and the human microbiome, particularly regarding the digestive system. It highlights influential works like OpenStax's "Anatomy and Physiology" and Marieb & Hoehn’s text, while also referencing studies on intestinal architecture and the growth regulation of gastrointestinal mucosa, underscoring the complexity of the digestive system and its microbial interactions.
