    Syrup-Phase Candy:

    This category of candy contains the majority of candies made. All of these candies are made with simple syrup (1:1 ratio of sugar and water boiled together) and flavorings.

    • Hard candy
    • Nougats
    • Caramels
    • Marshmallows
    • Jelly beans
    • Gums
    • Fudges
    • Fondants

    Fat-Phase Candy:

    This phase is when there is a form of fat introduced to a candy like chocolate or peanut butter. The two phases can be combined.

    Determining Doneness With Texture:
